GOLDEN VALLEY, Minn. -- Bring me some figgy pudding! The dessert is historic Christmas treat and perhaps, a lost art.
Susan Dunlop, Chef and co-owner of Joan's in the Park, came by KARE Saturday to show us how to make it.
Joan's in the Park is offering Figgy Pudding on its menu during the holidays, donating $3 for every pudding purchased to Toys for Tots.
Figgy Pudding recipe
Ingredients
1 cup golden raisins
1 cup dry sherry
1 cup butter, softened
1 cup sugar
1 cup all-purpose flour
1 tsp. baking soda
½ tsp. salt
4 eggs
2 cups chopped figs
1 ½ cups grated carrots
1 ½ cups chopped walnuts
1 cup bread crumbs
1 cup milk
1 cup currants
¼ cup dark molasses
1 T. grated orange peel
1 T. grated lemon peel
2 tsp. cinnamon
½ tsp. grated clove
½ tsp. nutmeg
¼ tsp. allspice
¼ tsp. powdered ginger
¼ tsp. black pepper
¼ cup Cognac
Directions
1. Soak raisins in sherry for at least 2 hours. Butter and sugar 16 ramekins.
2. Using the paddle attachment, cream together butter and sugar in the mixer. Sift together flour, baking soda and salt and slowly add to butter and sugar.
3. Add the raisins with the sherry and all other ingredients except for the cognac.
4. Portion mixture into the ramekins and cover tightly with plastic wrap and aluminum foil.
5. Using a hotel pan prepare a water bath using boiling water. Place the ramekins in the water bath and place in the oven at 350 degrees for 3 hours.
