GOLDEN VALLEY, Minn. - KARE 11's favorite baker Marjorie Johnson stopped by the kitchen to share her favorite brownie recipe. This is her 24th appearance on the KARE 11 Saturday Christmas show. She also shared some wonderful memories.
Frosted Brownies
Batter
4 squares unsweetened chocolate
1/2 cup butter
1 cup brown sugar, firmly packed
1 cup granulated sugar
3 eggs beaten
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/2 teaspoon salt
1 cup chopped walnuts
Preheat oven to 350 degrees. Line a 9 × 13-inch pan with foil. Let it
extend over the edges.
In a large microwaveable bowl, place chocolate and butter, and
microwave on medium until butter is melted. Stir until chocolate melts.
Stir in the brown sugar and granulated sugar. Stir in eggs and vanilla
until well combined. Stir in flour, salt and nuts. Spread the batter in a
greased 9 × 13-inch pan. Bake until brownies begin to pull away from
pan, 20 to 25 minutes. Remove from oven to cooling rack. After 10
minutes turn brownies out on a rack and remove foil. Allow brownies to
cool, then frost them. Cut into squares.
Makes 48 brownies.
Butter Cream Cheese Peppermint Frosting
1/4 cup butter
3 ounces cream cheese
1 teaspoon vanilla
1/2 teaspoon peppermint extract
2 cups powdered sugar
2 or 3 drops green food coloring
Place butter,cream cheese, and vanilla and peppermint extracts, and beat together till well mixed. Gradually beat in the powdered sugar to make a spreadable frosting. Beat in food coloring to make a green frosting. Spread on top of baked cooled brownies.
Note: If you want a softer frosting, you can add 1 to 3 teaspoons milk.
