MINNEAPOLIS — A popular Cajun restaurant in Edina is setting up shop at a trendy industrial food court in Minneapolis' Prospect Park neighborhood.
Mr. Paul's Po' Boys and Jams has recently opened at The Market at Malcolm Yards, near the University of Minnesota.
Mr. Paul's Po' Boys and Jams is the daytime eatery located at the back of Mr. Paul's Supper Club in Edina.
Chef and co-owner, Tommy Begnaud, joined KARE 11 Saturday to make a shrimp po' boy and to share other menu items available at The Market.
RECIPE: Shrimp Po'Boy
Ingredients:
- 4 oz Shrimp Tail Meat
- 1 c Cornmeal Dredge
- ½ c Buttermilk
- ¼ c Shredded Lettuce
- ¼ c Diced Tomato
- 2 T Remoulade
- 1 T Scallion
- 1 ea French Bread
Cornmeal Dredge
- ½ c Cornmeal
- ½ c AP Flour
- 2 t Kosher Salt
- ½ t Black Pepper
- 2 t Cajun Seasoning
Mix all ingredients thoroughly and retain them in a mixing bowl for use.
Remoulade
- 1 c Mayonnaise
- 1 T Whole Grain Mustard
- 1 T Sriracha or other Hot Sauce
- 1 t Horseradish
- 2 T Chopped Capers
- 1 T Chopped Parsley
- 1 t Cajun Seasoning
- 1 t Lemon Juice
- TT Salt and Pepper
Mix all ingredients in a mixing bowl and refrigerate until ready to use.
