EDINA, Minn. - Master Chef Competitor Jordan Roots visits KARE 11 to prepare signature dishes featured at Edina’s first brewery, Wooden Hill Brewing Company.
Inspired by his late mother’s cooking, Jordan will show you modern comfort food you can pull off in your own kitchen.

Beerita Chicken Tacos
(Servings: 10-12 tacos)
2 lb Boneless chicken, braised in equal parts chicken stock and light beer, until tender
1 can of corn
2 jalapenos, minced
½ C agave syrup
½ C white vinegar
1 red onion, minced
½ C sour cream
½ C mayonnaise
½ C rough chopped cilantro
2 limes juiced
2-3 pieces cooked duck bacon, diced
Queso fresco, crumbled
A splash of your favorite tequila
10-12 small tortillas
Procedure:
Combine agave syrup, vinegar and onions into small bowl. Cover and refrigerate for 20 minutes and up to 24 hours. Then, mix together corn, jalapenos and pickled onions, season with salt. Next using a hand blender, blend sour cream cilantro and lime juice. Season with salt. (If no blender, finely chop cilantro and mix by hand) Finally, place diced up bacon into hot pan and quickly add tequila. (Caution: stand back as tequila may produce flames while alcohol burns off) After 20-30 seconds, remove from pan and set aside.
Assembly:
Chop up cooked chicken into bite-sized pieces and place some onto a warm tortilla. Top with corn salsa, a drizzle of cilantro lime sauce, queso fresco and finish with tequila glazed bacon.
