GOLDEN VALLEY, Minn. — Lisa O'Connell of Sauce Anna Lisa is joined us to share ways to stretch her delicious pasta sauce to many weeknight meals.   From soup to mussels, she has simple, delicious and healthy recipes to share.

Tomato Bisque

1 Jar Sauce Anna Lisa prepared pasta sauce

1 Cup heavy cream

1 Cup chicken or vegetable stock (more if a thinner consistency is desired)

Fresh basil or parsley to garnish

In a medium sauce pot heat Sauce Anna Lisa pasta sauce, add cream and stock, stir to combine. Let simmer until heated. Serve and garnish with fresh basil or parsley.

Mussels Marinara

1 lb. fresh mussels

1 Jar Pasta Sauce, such as Sauce Anna Lisa

1 Cup White Wine

½ package pasta such as linguini, prepared as directed

In a medium sauté pan over low to medium heat add garlic, shallot and wine.  Allow to simmer for 5 minutes or until wine is reduced by half.  Pour in marinara sauce and heat to a bubble, add mussels, cover and let simmer for 6-8 minutes or until mussels are all popped open.  Serve over freshly prepared pasta with chunks of your favorite crusty bread.  Garnish with fresh basil.

Easy Minestrone Soup 

1 Jar of pasta sauce, such as Sauce Anna Lisa, traditional flavor

1 can each white bean, kidney beans, drained and rinsed

4 Cups vegetable or chicken stock

3 Cups spinach packed

3 carrots, peeled, chopped

2 stalks celery, chopped

1 onion, diced

2 cloves garlic, minced

2 cups pasta, small cut such as ditalini

3 bay leaves

Grated Parmesan cheese

Fresh Basil

In a large pot add olive oil and sauté garlic, onion, carrot and celery. Heat for 2-3 minutes or until fragrant. Add pasta sauce, stock, beans and bay leaves. Simmer for 15-20 minutes and add cooked pasta and spinach. Stir and heat throughout about 5 more minutes. Serve immediately topped with fresh Parmesan cheese and basil leaves. Serve with a big salad and fresh crusty bread.Note: pasta can be previously cooked and tossed in at the end to heat. If using uncooked pasta, toss it in when adding stock and sauce. To be sure it doesn’t overcook-prepare as directed or for 8-10 minutes depending on type of pasta being used.

 

Easy Pasta Sauce Chili 

1 Jar of pasta sauce such as Sauce Anna Lisa, spicy flavor

1 pound ground beef, turkey or chicken

1 Onion, chopped

2 bell peppers, chopped

1 jalapeno, chopped

2 Tablespoons chili powder

1 Teaspoon Cumin

1 Cup stock or broth beef or other type

1 Can (each) black beans, pinto beans and kidney beans rinsed, drained

Salt and pepper to taste

*cayenne pepper or crushed red peppers for heat as desired

Heat Olive oil in a large pot. Add ground beef, sauté until brown, push to the sides and add onion, garlic and peppers, sauté for 3-5 minutes or until fragrant and soft. Add sauce, spices, stock and beans. Stir well and bring to a boil. Reduce heat to simmer and allow simmering for 30 or so minutes. Taste to add salt, pepper and any additional spices. Serve hot with tortilla chips and garnish with jalapenos and fresh grated cheese.
