RECIPE: Black Bean Burgers from Appetite for Change

While some see food as simply a means of sustenance, the north Minneapolis-based organization uses it as a tool for building health, wealth and social change.

GOLDEN VALLEY, Minn. — It is one of life's basic tenets... humans need to eat to stay alive. 

Appetite for Change is about food as sustenance, but also a whole lot more. 

Founded by three diverse and strong women - LaTasha Powell, Princess Titus and Nicole Powell - the north Minneapolis-based organization is about using food as a tool to build health, wealth, and prompt social change. 

The ladies visited KARE 11 Saturday to discuss their new cookbook, "Appetite For Change: Soulful Recipes from a North Minneapolis Kitchen." It's filled with ideas built on recipes and stories from 12 years together working with area youth planting and tending community gardens, holding cooking workshops and delivering boxed meals to those in need. 

Among the recipes is one for Black Bean Burgers. 

Ingredients 

  • 2 Large Eggs
  • 4 Garlic cloves 
  • 1 Bell Pepper 
  • 1 cup of Mushroom 
  • 1 medium onions 
  • 1.5 tsp Chili Powder *optional 
  • 1 tsp Cumin  
  • 1 Tbsp of Garlic powder 
  • 1 Tbsp of Onion powder 
  • Salt and pepper to taste 
  • 2 Cups Rolled Oats 
  • ½ Tbsp olive oil 
  • 4 cans Black Beans 
  • Choice of cheese 
  • Lettuce 
  • Burger buns

Materials 

  • 2 bowls mixing spoon 
  • can opener 
  • baking sheet 
  • skillet 
  • knife 
  • measuring utensils 
  • strainer 
  • cutting board 
  • Portion scoop

Directions 

  1. Rinse cans before opening and wash produce before cutting.
  2. Gently clean beans under cool running water, set aside. 
  3. Using a cutting board finely chop bell pepper, onion, mushrooms and garlic.
  4. Over medium high heat add ½ Tablespoon of olive oil to skillet and slowly add in chopped produce cook for 2 minutes until soft remove from heat and cool. 
  5. In a large bowl add black beans, Oats, eggs and cooled mushrooms, onions, bell pepper and measured seasonings. 
  6. Using gloves smash mixture with hands until everything is well blended together.
  7. Place parchment paper on countertop, use the portion scoop to portion mixture then begin to mold your burger for cooking.
  8. Using your preferred cooking oil slightly oil skillet and cook bean burger 5 minutes on both side do not smash add cheese if desired to burger and melt; serve.
