CHICAGO — Farmer's Fridge makes fresh, healthy food as accessible as a candy bar. The company's smart vending machines have popped up across the Twin Cities, from the airport and local hospitals to office buildings and university campuses.
Known as the "World's Smallest Restaurant," their vending machines have a menu of 25 dishes.
The Chicago-based business now has more than 40 locations across the Twin Cities. Their signature jars of salad and grain bowls are also sold at Costco.
Emily Stucker from Farmer's Fridge joined KARE 11 Saturday to share a recipe.
DIRECTIONS:
(This recipe yields 4 servings)
Roast root vegetables. Preheat oven to 400ºF. Combine sweet potatoes, carrots, and parsnips on a sheet tray and toss with olive oil, sage, salt, and pepper. Roast for 20-30 minutes until vegetables are fork-tender and beginning to brown.
Make the cranberry quinoa. Prepare quinoa according to package directions. Mix all ingredients in a large mixing bowl.
To assemble the salad, divide the spinach between bowls. Top with cranberry quinoa, roasted root vegetables, apples, feta, and candied pecans. Drizzle with your favorite balsamic vinaigrette dressing and toss to combine. Top with candied pecans and enjoy!

Roasted Root Vegetables
1 cup sweet potatoes, diced
⅔ cup carrots, diced
⅔ cup parsnips, diced
1 Tbsp. olive oil
1 tsp. kosher salt
½ tsp. dried sage
½ tsp. black pepper
Cranberry Quinoa
2 cups cooked quinoa
2 Tbsp. olive oil
2 Tbsp. fresh lemon juice
¼ cup dried cranberries
Salt and pepper to taste
Salad
8 cups spinach
½ cup fuji apples, diced
½ cup granny smith apples, diced
1 cup roasted root vegetables
4oz. crumbled feta
¼ cup balsamic vinaigrette, homemade or store-bought
⅓ cup candied pecans, homemade or store-bought
