Grilled Steelhead recipe from Brookies Fish Market in St. Louis Park

Owner Chris Nelson and Co-Owner Mikel Wright joined KARE 11 Saturday to whip up a favorite dish for the summer.

ST. LOUIS PARK, Minn. — If you're looking for fresh fish, it doesn't get any fresher than Brookies Fish Market in St. Louis Park.

Frying, grilling, or whipping up ceviche... the folks at Brookies are ready to help elevate your summer seafood game.

Owner, Chris Nelson and Co-Owner Mikel Wright joined KARE 11 Saturday to make a favorite dish.

RECIPE: Grilled Hudson Valley Steelhead

Ingredients:

  • 1/2 Lemon 
  • 3 Tablespoons Olive Oil
  • A couple of healthy pinches of Rassy Rub
  • 1# Fillet Hudson Valley Steelhead Trout (skin on)
  • Pinch of Fresh Parsley (optional)

Directions:

  • Lightly oil the grate of your grill. 
  • Preheat the grill to medium heat (Roughly 350 degrees F). 
  • Drizzle and massage the olive oil on both sides of the fillet.  
  • Season the flesh side of the fish with a couple of pinches of Rassy Rub. 
  • Lay the trout on the grill skin side down for about 6 minutes. (until it begins to firm)
  • Flip and cook on the flesh side for an additional 4 minutes. Just enough time to crisp it up.  
  • At about 10 minutes remove from the grill. The fish flesh should flake easily with a fork. 
  • Cut in half and plate each portion. Squeeze the lemon over the top. Garnish with fresh parsley and serve.
