EDINA, Minn — Edina has a new neighborhood eatery. Starling, named after the bird, just opened, and its menu is filled with cross-continental dishes inspired by the starling's global migratory nature.
They serve dishes from Europe, Africa, Southeast Asia and the Americas.
Wyatt Evans, Starling's Culinary Director, joined KARE 11 Saturday to share a recipe.
RECIPE: Cilbir
- 2 ea. Whole Eggs
- 100 g. Turkish Yogurt (recipe below)
- 20 g. Aleppo Butter (recipe below) brought to a warm simmer
- 8-10 Dill fronds
- 2 ea. Naan Bread or other Flatbread
- 5 g. Crispy Garlic (you can find it at any of your local Asian Markets)
Poach eggs to your liking in gently simmering water. Using a slotted spoon, remove eggs from poaching water and allow to dry for 30 seconds. Spread yogurt onto a plate, creating a little well in the center; place the poached eggs in the well. Spoon on the Aleppo butter until you think to yourself "That's too much butter" then add a little more. Top with dill and garlic; a little pinch of Aleppo if you like, and enjoy for breakfast with your flatbread!
Turkish Yogurt
- 220 g. Full Fat Yogurt, strained overnight
- 5 g. Serrano Chili, minced
- 5 g. Shallot, minced
- 8 g. EVOO
- 3 g. Mint, minced
- 1 g. Black Pepper, ground
- 5 g. Lemon Juice
- 3 g. Kosher Salt
Whisk ingredients together until combined
Aleppo Butter
- 100 g. Unsalted Butter
- 2 g. Hungarian Sweet Paprika
- 1 g. Cumin, ground
- 3 g. Aleppo Chili
- 3 g. Roasted Garlic Cloves, minced
Melt butter in a small saucepot until warm and liquified. Add remaining ingredients and allow to steep for 5 minutes before using
