GOLDEN VALLEY, Minn. — Crafting cocktails for the holidays is a Christmas Day tradition for Kowalski's Culinary & Brand Director Rachael Perron.
She's back in studio on KARE 11 Saturday to celebrate the season with a fruity champagne-based drink that's both festive, flavorful and photogenic.
Honeyed fig champagne cocktail recipe
(Makes 2)
Ingredients:
- ¼ cup Kowalski’s Pure Honey
- ¼ cup water
- 6 fresh figs, cut into quarters, plus an extra fig for garnish
- 2 sprigs fresh thyme, plus extra for garnish
- ½ cup Kowalski’s Apple Cider
- 1 oz. Cointreau or Grand Marnier
- 8 oz. Champagne
Instructions:
- In a small saucepan over low heat, combine honey, water and figs; bring to a simmer over low heat, whisking continuously until figs begin to soften (about 3 min.).
- Add 2 sprigs of thyme; simmer for 10 min. more, stirring often.
- Cool to room temperature.
- Remove and discard thyme sprigs.
- Transfer honey mixture and figs to a food processor; blend until smooth.
- In a glass measuring cup, combine 2 tbsp. honey-fig mixture with cider and Cointreau; stir.
- Pour evenly into 2 glasses full of ice; top evenly with Champagne and stir gently.
- Garnish with extra thyme and fig slices.
- Reserve extra honey mixture for another time. Store in the refrigerator for up to 5 days.
