RECIPE: Honeyed fig champagne cocktail

Kowalski's Culinary & Brand Director Rachael Perron is back at KARE 11 Saturday to share a recipe.

GOLDEN VALLEY, Minn. — Crafting cocktails for the holidays is a Christmas Day tradition for Kowalski's Culinary & Brand Director Rachael Perron. 

She's back in studio on KARE 11 Saturday to celebrate the season with a fruity champagne-based drink that's both festive, flavorful and photogenic.

Honeyed fig champagne cocktail recipe

(Makes 2)

Ingredients:

  • ¼ cup Kowalski’s Pure Honey
  • ¼ cup water
  • 6 fresh figs, cut into quarters, plus an extra fig for garnish
  • 2 sprigs fresh thyme, plus extra for garnish
  • ½ cup Kowalski’s Apple Cider
  • 1 oz. Cointreau or Grand Marnier
  • 8 oz. Champagne

Instructions:

  1. In a small saucepan over low heat, combine honey, water and figs; bring to a simmer over low heat, whisking continuously until figs begin to soften (about 3 min.).
  2. Add 2 sprigs of thyme; simmer for 10 min. more, stirring often.
  3. Cool to room temperature.
  4. Remove and discard thyme sprigs.
  5. Transfer honey mixture and figs to a food processor; blend until smooth.
  6. In a glass measuring cup, combine 2 tbsp. honey-fig mixture with cider and Cointreau; stir.
  7. Pour evenly into 2 glasses full of ice; top evenly with Champagne and stir gently.
  8. Garnish with extra thyme and fig slices.
  9. Reserve extra honey mixture for another time. Store in the refrigerator for up to 5 days.
