Smack Shack's lobster bisque recipe

MINNEAPOLIS — Seafood is a popular choice for holiday meals, and soup is a Minnesota winter staple. 

One of the most popular restaurants in the Twin Cities is Smack Shack and chef/owner Josh Thoma joined KARE 11 Saturday to make a customer favorite.

RECIPE: Lobster bisque

Ingredients

-1 yellow onion diced

-6 ribs celery diced

-2 cups carrots diced

-1 lb butter

Sweat vegetables in butter until soft.

Add

-½ cup chopped garlic

Cook for 1 minute.

Add

-1 lb flour

Cook for 5 minutes.

Add 

-1.5 cups of tomato paste

Cook for 2 minutes.

Add

-1 tablespoon dried thyme

-1 tablespoon ground black pepper

-4 each bay leaves

-1 teaspoon cayenne

-1.5 cups white wine

Stir and bring to a boil.

Add

-5 qts lobster stock

-¼ cup salt

Cook on medium heat, stirring often.

When thickened, add

-½ gallon heavy cream

-3 cups half and half

-2 ½ tablespoons honey

-1 tablespoon champagne vinegar

Bring to a boil. Turn off the heat.

Add

-1 ½ cups brandy

Taste and adjust seasoning

Garnish with warm lobster and chives.
