WAYZATA, Minn. — The popular local restaurant chain Red Cow recently opened their sixth location in Wayzata.
The restaurant has the same menu of gourmet burgers, wings, beer, and wine - but Red Cow Wayzata also offers new exclusive dishes.
Culinary Director Trevis Langley dropped by KARE 11 Saturday with a new appetizer.
RECIPE: Elote Shishito peppers
12 shishito peppers
1 tbsp canola oil
1 tsp salt
¼ tsp pepper
1 tbsp lime juice
¼ cup cilantro lime aioli
¼ cup cotija cheese
2 tbsp chopped corn nuts
2 tbsp rough chopped cilantro
Sprinkle ancho powder
1 lime wedge
Cilantro lime aioli
1 cup mayonnaise
½ cup sour cream
1 tsp minced garlic
½ tsp minced shallot
½ cup finely chopped cilantro
1 tbsp lime juice
1 tsp lime zest
¼ tsp ground black pepper
½ tsp kosher salt
Place all ingredients into a mixing bowl and whisk together.
Heat a medium saucepan until it's slightly smoking and add oil, shishito, salt and pepper.
Sear shishito peppers to ensure all sides get a nice brown and slightly soft—about 3 minutes.
Deglaze with lime juice and let steam for 1 minute.
Add shishitos to a mixing bowl with cilantro-lime aioli, 1.5 oz cotija, and half of the chopped cilantro. Mix very well, to ensure the shishito peppers are completely covered.
On a plate line, the shishitos along the plate with the stems all facing the same direction outward.
Finish with more cotija and chopped cilantro on top, corn nuts, Ancho powder, and lime wedge.
