MINNEAPOLIS — A popular local Italian restaurant, Red Rabbit, is launching an entirely new brunch menu at both of its restaurants in Minneapolis and St. Paul.
It's the eatery's biggest menu change since its 2016 opening.
Chef Adam Lerner joined KARE 11 Saturday to share a couple of the new items he created for the menu.
RECIPE: Cacio e pepe omelette
- 1 tablespoons butter
- 4 each whole eggs
- ¼ cup parmesan, grated
- ¼ cup beurre blanc
- 2 tablespoons pecorino, grated
- 1 teaspoon black peppercorn, freshly cracked
- Whisk eggs in a bowl and set aside.
- Place a nonstick pan on the stovetop at medium-high heat and add butter.
- Add eggs to the pan and stir with a rubber spatula.
- Take off the heat and continue to stir until you see the egg set with just a bit of runny eggs left.
- Sprinkle grated parmesan over the top and put the pan in a 350-degree oven for 1 minute
- Using a spatula, roll the omelet toward one side of the pan and onto the side of a large plate.
- Ladle beurre blanc over the top of the omelette.
- Finish with microplaned pecorino and freshly cracked pepper.
RECIPE: Buerre blanc
- ½ cup white wine
- 2 tablespoons minced garlic
- 2 tablespoons minced shallot
- ¼ cup heavy cream
- 1 pound butter
- 2 tablespoons lemon juice
- In a small pot, reduce wine, shallots, and garlic, until barely any liquid is left.
- Add heavy cream and bring to a simmer.
- While whisking over low heat, slowly add butter, little by little until fully incorporated.
- Season with lemon juice and salt to taste.
