Recipe for Rock Elm Burger

Burger
4 ground beef burger patties (about ½ pound each)
1 tsp burger seasoning
4 burger buns
Butter
Arugula
4 slices Montamore cheese

Season both sides of burger patty. Cook burger on grill or frying pan to desired doneness.
Butter each side of burger bun, and toast. Add cheese to burger when burger is near desired
doneness. Place burger patty with cheese onto the bottom half of the toasted bun. Top with
roasted mushrooms and arugula. Spread candied walnut aioli on the top bun.

Roasted Mushrooms

1 cup mushrooms (variety of button, porcini, portobello)
1 tbsp Olive oil
¼ tsp Paprika
⅛ tsp Ground cumin
⅛ tsp Dried thyme
⅛ tsp Red pepper flakes
½ tsp Chopped Parsley
½ tbsp Lemon Juice
½ tbsp Salt
¼ tsp Pepper

Combine herbs and olive oil in bowl, mix well. Add in mushroom mix, combine. Place onto lined
baking sheet, and roast at 425 degrees for 1015
minutes. Let cool before adding on top of
cooked burger patty.

Candied Walnut Aioli

½ cup Candied walnuts
½ cup Mayonnaise
⅛ tsp Pepper
¼ tsp Salt
⅛ tsp Lemon zest
⅛ tsp Lemon juice
¼ tsp Honey

Grind candied walnuts into small pieces with a food processor. Combine all other ingredients,
and fold chopped candied walnuts in.
