MINNEAPOLIS — This week an event will celebrate women leaders in culinary arts, business, sports, and philanthropy.
The third annual Taste of the Twin Cities is happening at the Renaissance Minneapolis, The Depot at 6 p.m. on Thursday, March 7.
The event raises money for the University of Minnesota's Food is Medicine Program.
Katy Burke from TeamWomen and honored chef Soleil Ramirez from Crasqui Restaurant joined KARE 11 Saturday to give a sneak peek.
RECIPE: Ceviche de Cumana (4 people)
Leche de tigre
4oz Red onion chopped in big pieces
4oz Cilantro with stamp
1 cup grapefruit juice
1tb Salt
1tsp Black pepper
Mix all the ingredients in a bowl and let it marinate for 2 hours. Then put the ingredients in the blender and pulse it 3 times, strain the preparation and is ready to use
To finish
1lb red snapper no skin and in cubes
2 sweet peppers in julienne (no seeds)
1 small red onion in julienes
2tb of pomegranate seeds
Leche de tigre
Fresh cilantro to finish
Mix all the ingredients in a bowl with the Leche de tigre, let it rest three minutes and then serve the ceviche in your favorite plate and finish with fresh cilantro
