Chef Lisa's foil packet recipes

GOLDEN VALLEY, Minn. — Lisa O'Connell of Sauce Anna Lisa is here to share some delicious and quick dinner ideas that are as easy to prep as they are to clean up.  Full flavored foil packet dinners ready in under 30 minutes. 

Fresh, simple, fast and delicious foil packet recipes

Salmon, lemon and Asparagus 

1 portion of Salmon per foil packet

4-6 spears Asparagus per packet

3 Slices of Lemon per packet

White wine

Butter

Salt and pepper

Preheat oven to 400

Cut a square of heavy-duty aluminum foil (12in or r about three times the size of your salmon.  Spray foil with nonstick cooking spray or use a swirl of olive oil to coat bottom.  Place Salmon on foil and season with salt and pepper or desired seasoning.  Top with trimmed asparagus, sprinkle with salt and pepper, top with slices of lemon.  Fold sides up to prevent spill.  Add a scant ¼ cup of white wine and a teaspoon of butter seal package completely to a slight tent over top and place on a baking sheet.   Bake at 400 for 12-15 minutes or until salmon is cooked through.   Take caution when opening foil as steam will release.  Plate and serve.  Pour some of the remaining cooking juices over salmon for extra flavoring.

Tilapia and Vegetables with Sesame soy and Garlic

1 portion tilapia per packet (1 filet)

1 large carrot, peeled in to ribbons

Red Bell pepper, thinly sliced

4-6 Scallions trimmed, chipped

2 tablespoons soy sauce

1 tablespoon honey or syrup

1 tablespoon rice wine vinegar

1 tablespoon sesame oil

Toasted sesame seeds for garnish

Preheat oven to 400

Cut squares of aluminum foil for number of packets you will prepare.  Spray aluminum with nonstick spray or use a swirl of olive oil to coat foil.  Place piece of tilapia on foil and season with a pinch of pepper.  Using a peeler or mandolin, thinly slice carrot pieces on top.  Add thinly sliced pepper and chopped scallions. 

In a medium bowl whisk together soy sauce, rice vinegar, honey and sesame oil.

 *Crushed red peppers or siracha, can be added for heat*

Spoon soy mixture over tilapia and vegetables and tent foil packet.  Place on baking sheet and bake at 400 for 10-12 minutes or until fish is cooked through. 

Chicken parmesan foil packet

Chicken breast 1 per packet

Zucchini, washed and sliced, ½ per packet

½ Cup Robust red pasta sauce, such as Sauce Anna Lisa, Spicy variety, per packet

½ Cup mozzarella cheese, per packet

1 tablespoon parmesan cheese, per packet

Fresh basil or parsley for garnish

Preheat oven to 400

Cut squares of aluminum for number of packages you will prepare.  Spray aluminum with nonstick spray or use a swirl of olive oil to coat foil.  Place piece of chicken on foil and season with salt and pepper.  Top with red sauce to cover chicken, dust with parmesan cheese, top with mozzarella cheese and finish with zucchini coins.  Fold sides of foil upward to tent slightly and place on a baking sheet.  Bake at 400 for 18-20 minutes or until chicken is cooked through or reaches an internal temp of 165.  Take care when opening foil pack as steam will escape.  Top with remaining sauce as desired and finish with mozzarella cheese and basil or parsley.
