GOLDEN VALLEY, Minn. — KARE 11 News at Noon continues to help you prepare for holiday cooking with another edition of Holidish, this time featuring a pair of delicious side dish recipes from a modern American restaurant coming soon to the Twin Cities.
Chef Michael Shaughnessy will be opening Pink Ivy Kitchen and Bar in Hopkins next spring; construction on the new restaurant is set to begin this month. You can follow along with the progress to opening day on Pink Ivy's social media pages.
Orange-Cranberry Vinaigrette
- 1 cup dried cranberries or craisins, chopped and soaked in water for 30 minutes
- ½ cup apple cider vinegar
- 2 oranges, juiced and zested
- 2 tbsp smooth dijon mustard
- 1 tbsp ginger root, grated on microplane
- 2 tbsp shallots, minced
- 1.5 cups canola oil
- Salt to taste
DIRECTIONS:
- Mix all ingredients in a mixing bowl except the olive oil.
- Mix well with a whisk
- Slowly add the oil (it's ok if it looks broken)
- Add salt to taste
Roasted Carrots
- 2 lb carrots, cut in ½ inch slices
- 3 tbsp maple syrup
- 2 tbsp olive oil
- Salt and pepper to taste
DIRECTIONS:
- Cut carrots and toss in a mixing bowl with all other ingredients
- Place on a cookie sheet lined with aluminum foil or parchment paper
- Roast in oven at 350 degrees for 40 minutes
- Let cool, can be used next day as well
- Toss the carrots with arugula, mixed greens and some of the dressing
- Top the salad with more dressing, goat cheese and nuts of choice
