Homemade Pepperoni Mini Pizza Bagels with Basil

GOLDEN VALLEY, Minn. - Friday is National Pizza Day and National Bagel Day, and to celebrate, Melissa Bradley with Hy-Vee in Savage stopped by KARE 11 Sunrise to share some delicious "pizza bagel" recipes you can make at home.

Fruit Pizza Bagel

Serves 1

All you need:

½ Ancient Grain or Whole Wheat Bagel

1 tbsp Reduced Fat Cream Cheese

1 – 2 strawberries, thinly sliced

½ kiwi, thinly sliced

1 clementine, peeled and segmented

4 – 6 blueberries

All you do:

  1. Toast bagel to desired taste preference. Or, if you would prefer, serve at room temp.
  2. Spread reduced fat cream cheese on bagel.
  3. Wash and slice strawberries and kiwis. Peel and segment clementine. Wash and dry blueberries.
  4. Place assorted fruit on top of fruit pizza bagel.

Note: Use your favorite fruits! You could top it with grapes, raspberries, blackberries, mango slices, and more!

Veggie Pizza Bagel

Serves 1

All you need:

½ Ancient Grain or Whole Wheat Bagel

1 tbsp Pizza Hummus (see additional recipe)

¼ cup yellow bell pepper, diced

¼ cup red bell pepper, diced

2 – 3 mushrooms, sliced

2 – 3 slices mozzarella cheese

¼ avocado, thinly sliced

All you do:

  1. Spread pizza hummus on bagel.
  2. Diced bell peppers and slice mushrooms.
  3. Spread mozzarella slices on bagel and top with bell peppers and mushrooms.
  4. Broil in oven on a sheet pan for 3 – 5 minutes or until mozzarella melts and edges of bagel are crisp.
  5. Remove from oven and top with avocado slices. Serve immediately.

Note: You could serve this option with your favorite veggies – add olives, red onion or spinach for additional flavor!

Breakfast Pizza Bagel

Serves 1

All you need:

½ Ancient Grain or Whole Wheat Bagel

½ avocado, mashed

1 egg – scrambled, fried or over-easy

1 slice tomato

1 tbsp Pico de Gallo, prepared

All you do:

  1. Toast bagel to desired taste preference.
  2. While bagel is toasting turn pan to medium-low heat and prepare egg to your liking.
  3. In a small bowl mash avocado with a fork.
  4. Spread mashed avocado on top of toasted bagel. Top with tomato slice and egg. Sprinkle Pico de Gallo on top. Enjoy immediately!

Ooey Gooey Pizza Bagel

All you need:

½ Ancient Grain or Whole Wheat Bagel

1 tbsp Pizza Hummus (see additional recipe)

3 – 4 slices mozzarella cheese

4 – 5 turkey pepperoni slices

2 – 3 fresh basil leaves, cut chiffonade

1 – 2 fresh parsley springs, minced

All you do:

  1. Spread pizza hummus on bagel.
  2. Top with turkey pepperoni slices and fresh cut basil leaves.
  3. Arrange mozzarella on top of ingredients to completely cover bagel.
  4. Place on sheet pan and broil on high for 3 – 5 minutes or until cheese melts and edges of bagel are crisp.
  5. Garnish with fresh parsley and enjoy immediately.

Topping recipe:

Pizza Hummus

Serves 6 (¼ cup each).

All you need:

1 (15 oz) can Hy-Vee no-salt-added garbanzo beans, drained and rinsed

1 (6 oz) can Hy-Vee tomato paste

¼ cup shredded Parmesan cheese

¼ cup water

2 tbsp fresh lemon juice

1 tbsp Hy-Vee Select extra-virgin olive oil

2 tsp minced garlic

1 tsp dried oregano

1 tsp dried basil

¼ tsp crush red pepper flakes

Salt and pepper, to taste

All you do:

  1. Place garbanzo beans, tomato paste, Parmesan cheese, water, lemon juice, olive oil, garlic, oregano, basil and red pepper flakes in a food processor and process for 1 to 2 minutes, until smooth and creamy. If too thick, add one tablespoon of water at a time until the desired consistency is reached. Season with salt and pepper.
  2. Serve hummus as a dip for raw vegetables, pretzels, whole grain crackers, or use a spread on favorite sandwich, pizza or wrap.
  3. Store extra hummus in an airtight container in the refrigerator.
