Midsommar sandwich from Cooks | Bellecour

For hundreds of years, Midsommar in Scandinavia has been a celebration of the arrival of summer.

MINNEAPOLIS — It's hard to believe it's the middle of June already. 

In Scandinavian culture, this time of year is called Midsommar. It's the celebration of the summer solstice and the longest day of the year.

Karl Benson, co-owner of Cooks | Bellecour, joined KARE 11 Saturday with a summery sandwich perfect for the occasion.

The Midsommar sandwich consists of potatoes, pickled herring, sour cream and dark rye bread.

Cooks | Bellecour has locations in St. Paul, Minneapolis' North Loop, and Edina.
